Bread, as a staple food, is a promising matrix for the incorporation of plant-based high-protein ingredients to combine both trends. This study aims to provide a better understanding of techno-functional changes and impacts of plant-proteins during bread production, which could advance the development of high-quality products with high levels of plant-protein. A selection of high-protein ingredients from wheat, maize, potato, carob, pea, lupin and faba bean were subjected to compositional analysis and applied in wheat bread formulations, replacing 15% of wheat flour. Their impact on dough properties (gluten-aggregation, pasting behaviour, rheology) as well as bread quality (volume, crumb structure, crumb hardness) was analysed. The high-protein ingredients were found to affect gluten-aggregation, pasting and bread characteristics. Results indicated a weakened gluten-network in doughs containing potato and pea protein. Also pasting behaviour was mostly affected by the potato protein suggesting a heat induced improvement of its baking performance. Good bread quality, represented by high specific volumes and low crumb hardness, was observed for gluten, zein and carob. Breads with pea, lupin and faba bean showed only slightly inferior quality characteristics.", "keywords": ["2. Three experiments (E1, E2, E3) were carried out, in which legumes were either noninoculated or inoculated with rhizobia alone or together with plant growth, promoting rhizobacteria. Inoculation of legumes with rhizobia considerably increased N2 fixation in E1 but had no impact on N2 fixation in E2 and E3. In E1, the application of cowpea decreased yield because it imposed a stronger nematode infection as the cowpea plants acted as a good host for Meloidogyne. However, in E2 and E3 the nematode infection was successfully controlled and the legumes significantly increased the tomato yield when inoculated in E2, irrespective of legume inoculation in E3. The total N concentration in the tomato plant tissues was significantly increased by legume application in E2 and E3, but not in E1. However, the presence of antinutritional factors reduces their nutritional value by decreasing the bioavailability of proteins and minerals. This study\u2019s aim was to select microbes and fermentation conditions to affect the nutritional value, taste, and safety of products. Single lactic acid bacteria (LAB) strains that reduce the levels of antinutrients in faba bean and pea were utilized in the selection of microbes for two starter mixtures. They were studied in fermentations of a faba bean\u2013oat mixture at two temperatures for 24, 48, and 72 h. The levels of antinutrients, including galacto-oligosaccharides and pyrimidine glycosides (vicine and convicine), were determined. Furthermore, a sensory evaluation of the fermented product was conducted. Fermentations with selected single strains and microbial mixtures showed a significant reduction in the content of antinutrients, and vicine and convicine decreased by up to 99.7% and 96.1%, respectively. Similarly, the oligosaccharides were almost completely degraded. Selected LAB mixtures were also shown to affect the product\u2019s sensory characteristics. FPR had a lower protein content (64.1%, dry matter (DM)) compared to FPI (90.1%, DM), due to the inherent limitations of air classification. Of the two ingredients, FPR demonstrated superior functionality, including higher protein solubility (85%), compared to FPI (32%) at pH 7. Foaming capacity was higher for FPR, although foam stability was similar for both ingredients. FPR had greater gelling ability compared to FPI. The higher carbohydrate content of FPR may have contributed to this difference. An amino acid (AA) analysis revealed that both ingredients were low in sulfur-containing AAs, with FPR having a slightly higher level than FPI. The potential nutritional benefits of the aqueous process compared to the dry process used in this study were apparent in the higher in vitro protein digestibility (IVPD) and lower trypsin inhibitor activity (TIA) in FPI compared to FPR. Additionally, vicine/convicine were detected in FPR, but not in FPI. Furthermore, much lower levels of fermentable oligo-, di- and monosaccharides, and polyols (FODMAPs) were found in FPI compared to FPR. The life cycle assessment (LCA) revealed a lower environmental impact for FPR, partly due to the extra water and energy required for aqueous processing. The FB plants were incorporated to the soil at anthesis together with either FYM or composted olive-mill waste (CO). Green manuring with FB resulted in higher soil mineral N levels during the subsequent tomato crop and higher tomato fruit yield when combined with FYM, compared to compost. The level of soil mineral N was the main restrictive factor for yield in organic greenhouse tomato. Considering this knowledge gap, the effects of legume biomass from faba beans that are cultivated outdoors (FAB), or from feed-grade alfalfa pellets at two different doses (AAL = 330 g m\uffe2\uff88\uff922; AAH = 660 g m\uffe2\uff88\uff922) that were applied as MGM on the nutrition and yield of an organic greenhouse crop of tomatoes were evaluated. All of the MGM treatments increased the mineral N concentrations in the soil throughout the cropping period, and the total N concentration in tomato leaves when compared to the untreated control. FAB and AAH treatments had a stronger impact than AAL in all of the measured parameters. In addition, AAL, AAH, and FAB treatments increased the yield compared to the control by 19%, 33%, and 36%, respectively. The application of MGM, either as faba bean fresh biomass or as alfalfa dry pellets, in organic greenhouse tomatoes significantly increased the plant available soil N, improved N nutrition, and enhanced the fruit yield. However, the N mineralization rates after the MGM application were excessive during the initial cropping stages, followed by a marked decrease thereafter. The objective was to identify grain legume species and cultivars for designing novel cropping systems in north-eastern Germany. The data supports agronomic analyses, as well as dynamic simulation modelling and includes details on crop growth, soil characteristics and weather. In the first part of the experiment different species and cultivars and the effect of irrigation were compared in a split block design with four replicates and the factors species/cultivar and irrigation during five consecutive years (2017-2022). The treatments included eight to 18 species/cultivars depending on the year with soybean, narrow-leafed lupin, white lupin, yellow lupin, faba bean, chickpea, dry bean, lentil and summer barley. Buckwheat was cultivated as a reference crop. Soybean and lupin seeds were inoculated with HISTICK\u00ae soybean/lupin (BASF, Germany) and in the last year with LegumeFix. No fertilizers and conventional crop protection was applied. All lupin species were treated with a natural insecticide against the Sitona weevils. For technical reasons, treatment with this insecticide of field bean, soybean and buckwheat was also unavoidable in some years. Measurements included grain yield, one thousand seed weigh, macro nutrients (N, P, K) in the grain, and additional agronomic observations including number of plants and plant phenology. Irrigation water was applied with a sprinkler system using the Web-BEREST model (Mirschel et al., 2014) to determine the amounts and timing (data on the amounts and dates are provided). In the second part of the experiment, the pre-crop effect of the mentioned legumes and buckwheat was tested on the grain yield and nutrient content in the following winter wheat crop and on the nitrogen dynamics in the soil. Before winter (November/December) and in the subsequent spring (February/March), mineral nitrogen was measured in the soil at three depths (0-30 cm, 30-60 cm, and 60-90 cm) after the different pre-crops.
